The Tamil cuisine is one of the main Indian cuisines, and one of the least influenced by foreign cultures. Tamil Nadu has developed a very elaborate vegetarian gastronomy, pairing a balanced nutritional intake with balanced flavours.

Rice is the main ingredient of the Tamil cuisine, complemented with all sorts of patties or fritters. Legumes are also widely used. You can find them in spicy stews, in broths or even in fritters. Its particular aromas stem from the condiment mix: tamarind, coconut, pepper, curry leaves, etc. Sweet and sour and spicy constitute its dominant notes.
