Capital of Shaanxi Province, People’s Republic of China

The Shaanxi Province is renowned for its noodles, in a triangular form, cooked in a pot, knife-cut, hand-pulled and so on, all served with aromatic sauces. These basic ingredients in soups and stir-fried dishes are skillfully produced by dough-juggling artists. Another street food classic is Roujiamo, the Chinese hamburger. It consists of a round flatbread stuffed with meat and generally mixed with paprika and green peppers. A real treat!

The city of Xi’an, capital of Shaanxi province (Central-eastern China), is represented by the  restaurant Intoxicating Chang'an.
